Ingredients

  • 1 lb boneless beef chuck, cut in 1/2 inch cubes
  • 2 14.5 oz cans diced tomatoes with basil, garli, and oregano (undrained)
  • 2 14oz cans beef broth
  • 1 15 oz can canneilini beans, rinsed and drained
  • 1 15 oz can red kidney beans, rinsed and drained
  • 1 cup thinly sliced carrots (2 med)
  • 1/4 tsp salt & pepper
  • 1 cup dried bow tie pasta
  • 1 med yellow summer squash halved lengthwise and sliced
  • grated parm cheese

Step 1

1. In 5- 5.5 quart slow cooker combine beef, undrained tomatoes, broth, beans, carrots, s&p. Cover and cook on low heat setting for 8-9 hrs or high for 4-4.5 hrs. Add pasta and squash to cooker (if using low setting, turn to high). Cover and cook 30-45 mins more or until pasta is tender. Season w s&p. Top with parm cheese
