Ingredients
- 1 lg onion sliced
- 2 Cornish hens
- 2 tbs. melted butter
- 3 c. cooked rice
- 2 chopped tomatoes
- 1/2 c. chopped red onion
- 1/2 c. chopped celery
- 1 chopped bell pepper
- 4 oz chopped mushrooms
- 1/2 c. shredded carrots
- 1/4 c. chopped fresh parsley
- 1 diced apple
- Olive oil
- Salt & pepper
Preparation
Step 1
Preheat oven to 425 degrees. Place the sliced onion in the bottom of a in a 9x13 inch baking dish. In a small bowl combine the rice, 2 tablespoons of butter, onion, celery, bell pepper, mushrooms, carrots, apple and parsley. Remove the giblets from the hens, and rinse them inside and out. Pat dry and place the hens on top of the sliced onion. Rub bird with olive oil and season inside and out with salt and pepper, then stuff with equal amounts vegetable mixture. Place stuffed birds, breast side up. Cover dish and bake in the preheated oven for 30. Remove cover and brown at 500 degrees. Place remaining stuffing in a dish and bake along with the bird.
