Chocolate Fudge Glaze 1 Picture

Ingredients

  • I use this glaze to frost the 90-calorie cupcakes (you can find it in my recipe collection)
  • 3 tbsp semi-sweet chocolate chips
  • 1/4 cup non-fat half-and-half
  • 3/4 cup granulated no-calorie sweetener (I use Splenda)
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar, sifted
  • 1/3 cup cocoa powder, preferably Dutch-process

Step 1

Place the chocolate chips in a medium microwave-safe bowl. Add the nonfat half-and-half and the sweetener. Place in the microwave and heat for one minute. Remove, add the vanilla, and stir until the chocolate chips are melted and the mixture is smooth.

With an electric mixer on low speed, or whisk, beat in the powdered sugar until smooth. Sift in the cocoa powder and beat again until smooth. Glaze will thicken as it cools. To thin, re-warm for 15 to 20 seconds.
