  • 棉花糖 120g
  • 奶油35g
  • 奶粉 100g
  • 抹茶粉 1t
  • 杏仁果 100g
  • 炒熟的黑芝麻 2t

Preparation

Step 1

1. 烤箱預熱,放入杏仁條烤熟,我用小烤箱溫度不能太高,280度F或140度C烤約5-7分鐘,如用大烤箱就要用300度F或150度C烤約5-7分鐘,看到有些金黃就要取出,整顆的杏仁要烤7-8分鐘.(也可直接買熟的就不用烤)

2. 奶粉、抹茶粉及黑芝麻先拌勻備用.

3. 在鍋中放入奶油及棉花糖用中小火煮至融化成液體狀.(用不沾鍋來煮,較不會黏鍋,如果買到的棉花糖是大顆的,可以用剪刀或刀子切成小塊再入鍋煮,可更快融化,我這次買小的.)

4. 邊加熱邊攪拌,等棉花糖八分融化(還有一些沒完全融化)就可熄火.

5. 利用在爐子上的餘温,快速攪拌就可完全融化.

6. 趁熱加入芝麻抹茶奶粉拌勻,棉花糖冷了會變硬,就不好拌.

7. 加入杏仁拌勻.

8. 拌好的牛軋糖塊.

9. 取一張烤盤紙(parchment paper),將成糰的牛軋糖塊塑形成長方形.

10. 放涼後,再切成長條狀,或切成一口大小的小方塊.

11. 用糖果紙包起來,或裝入容器內,牛軋糖不會黏手.



小叮嚀:

**喜歡奶香味更濃的,可以在做法5. 之中加入白巧克力25g拌勻,但做好的牛軋糖會甜一點.

**奶油的量減少,牛軋糖的口感就會變硬,相反奶油量增加,牛軋糖的口感就會更軟.
