Apple Bundt Cake

Ingredients
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 Tbsp ground cinnamon
- 1 tsp ground cloves
- 1/4 tsp salt
- 1/4 grated nutmeg
- 10 Tbsp butter, softened
- 1-1/2 cup granulated sugar
- 2 large eggs
- 1 cup apple butter
- 2 medium apples peeled, cored & grated
- 1 cup pecans or walnuts chopped
- 1/2 cup raisins
- 1/2 cup powdered sugar
- 6 tsp orange or lemon juice

CAKE
Grease bundt pan and preheat oven to 350 degrees.
Whisk together flour, baking powder and soda, cinnamon, cloves, salt, nutmeg and ginger. Set aside. Beat butter and granulated sugar on medium until smooth, thick and pale. Add eggs one at a time beating until light and fluffy after each. Reduce speed to low and mix in apple butter. (Don't worry if batter curdles) Add grated apples, mixing to blend completely. Add flour mixture, mixing only until it disappears into the batter. Fold in nuts and raisins. Pour batter into bundt pan.
Bake 50 minutes or until inserted toothpick comes out clean. Unmold and cool on rack.
ICING
Stir together powdered sugar and two squirts of juice at a time until icing falls easily from the tip of a spoon. Drizzle over cake and let dry.
