Stuffed Meatloaf

With sun dried tomatoes, chopped spinach, and marinated peppers stuffed inside, this meatloaf isn't just your average meatloaf! Filling and flavorful, this one's perfect for a one-dish family meal, or alongside a simple salad.

Ingredients
- MEATLOAF:
- 4 pounds ground beef
- 2 tablespoons Worcestershire Sauce
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- 1/2 cup milk
- 1 cup oats
- 2 eggs
- STUFFING:
- 10 ounces frozen chopped spinach, thawed
- 3 cloves garlic, minced
- 3 sun dried tomatoes, sliced
- 1/2 cup marinated peppers, sliced thin
- 4 ounces mozzarella cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- GLAZE:
- 2 tablespoons honey
- 2 tablespoons Worcestershire Sauce
- 2 tablespoons ketchup
Preparation
Step 1
MEATLOAF:
In a large bowl combine all of the meatloaf ingredients and mix well.
STUFFING:
On a medium to low heat; heat a medium size frying pan with the olive oil; add the spinach, garlic, sun dried tomatoes, marinated peppers and seasonings. Heat until the garlic is fragrant.
Place the prepared ground beef in a baking pan and shape it into a bowl. Place the stuffing inside filling from end to end, finishing with the shredded cheese. Gently, fold the meatloaf mixture over the top to cover the stuffing.
GLAZE:
Place glaze ingredients in a small bowl and mix.
Spoon the glaze over the top of the meatloaf from end to end.
Preheat oven 350°F. Bake for 45 to 50 minutes.
