Tomato Salad with Goat Cheese

I was looking to use up some field grown tomatoes. I had the cheese and dressing in the fridge, so I combined them. It was a huge hit with dinner guests.

Ingredients

  • 2 large tomatoes, seeded and chopped to bite size pieces
  • several spoonsful of Tomato/Basil flavored Goat Cheese
  • Goat Cheese salad dressing
  • Cook's notes: The cheese and dressing can be found, seasonally, at Aldi.

Preparation

Step 1

Cut the tomatoes in half horizontally. Using a pointed baby spoon, scoop out the seeds and discard them. Cut the tomatoes into bite-sized pieces. Sprinkle a few tablespoons of the goat cheese over the tomatoes. Sprinkle with Jane's Crazy Salt and stir to combine. Top with the dressing and serve chilled.
