Ingredients
- 2 medium tomatoes, seeded and chopped
- 1/3 cup mozzarella cheese cut into small cubes
- 1/4 cup finely chopped red onion
- 2 tablespoons shredded fresh basil
- 2 teaspoons olive oil
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 slices whole grain baguette, toasted

Preparation
Step 1
1. In medium bowl combine tomatoes, cheese, red onion, basil, oil, balsamic vinegar, salt, and pepper. Serve immediately or cover and chill for up to 24 hours. 2. To serve, spoon tomato mixture onto toasted baguette slices. Makes 4 servings.
