Ingredients
- 1 c warm water
- 1 T sugar
- 2 1/4 t active dry yeast
- 2 1/4 c all-purpose flour
- 1 c cake flour
- 1 T kosher salt
- 2 T olive oil

Step 1
1. Combine water, sugar, and yest. Proof until mix turns foamy, about 5 min.
2. Mix flours and salt int he bowl of a stand mixer fitted with a bough hook.
3. Add oil to proofed yeast mix; then pour into flour mix. Knead dough on low speed 10 min. Place dough in a lightly oiled bowl, turning dough to coat surface. Cover dough with plastic wrap and let rise in a warm place until doubled, about 2 hours.
4. Punch dough down and divide into 4 balls, pinching the bottoms closed. Cover with plastic wrap, and let rise in a warm place another hour.
5. Roll out dough to a 12 in circle and grill or bake. Cover with toppings and bake.
