Ingredients
- 1 pt. Cherry tomatoes
- 1 ripe avocade, halved, pitted and peeled
- 1 Tbsp fresh lime juice
- 2 Tbsp minced red onion
- 1 Tbsp. Minced cilantro
- 1 small jalapeno, seeded and minced
- Salt and pepper to taste
- Toasted corn tortilla for garnish
Preparation
Step 1
Slice and discard tomato tops. With small spoon remove seeds and pulp, discard.
Drain tomato shells upside down on paper towels. In medium bowl mash avocado to a chuncky consistency. Stir in lime juice, onion, cilantro and jalapeno. Season with salt and pepper.
Fill tomato shells with guacamole, and garnish with corn tortilla pieces if desired.
