Ingredients
- 1 pound pork shoulder or 4 thick cut boneless pork chops, cut into 3/4 inch cubes
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 6 cloves garlic, minced
- 2 tbsp chopped fresh oregano or 1 tbsp dried oregano
- 1 tsp Kosher Salt
- Freshly ground pepper to taste
- Sauce
- 2 tbsp plain greek yogurt
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1-2 tbsp water
Preparation
Step 1
1. Combine pork, oil, garlic, lemon juice, oregano , salt and pepper in a medium bowl and toss to combine. Cover with plastic wrap and refrigerate for 8 hours
2. When ready to grill- make sauce. Whisk together yogurt, lemon juice, tahini and 1 tbsp water. Should be the consistency of heavy cream. If too thick add the additional tbsp of water
3.Heat grill to high heat. Thread pork cubes on metal skewers or bamboo skewers that have been soaked. Grill until brown on all sides and cooked through, about 12 minutes
4. Serve with yogurt suauce or Tzatziki Sauce and brown rice
