Ingredients
- 1 T. olive oil
- 1 lb. boneless, skinless chicken breasts, cubed
- 1/4 c. onion, chopped
- 1 c. chicken broth
- 4-1/2 oz. can chopped green chiles
- 1 t. garlic powder
- 1 t. ground cumin
- 1/2 t. dried oregano
- 1/2 t. dried cilantro
- 1/8 t. cayenne pepper
- 19-oz. can cannellini beans
- Garnish: shredded Monterey
- Jack cheese
Preparation
Step 1
Heat oil in a large saucepan over high heat; add chicken and cook 4 to 5 minutes, stirring often. Remove chicken with a slotted spoon. Add onion to pan; sauté 2 minutes. Stir in broth, chiles and spices; simmer 2 minutes. Add chicken and beans; simmer 5 additional minutes, or until chicken juices run clear. Garnish with cheese before serving.
