Italian Tomato Bean Soup

Ingredients

  • 1 clove garlic, crushed
  • 1/2 c chopped onion
  • 2 c diced carrots
  • 1 medium diced zucchini
  • 1 medium diced yellow squash
  • 2 large potatoes diced
  • 1 heaped T dried basil
  • 1/4 t black pepper
  • 30 oz low sodium vegetable broth
  • 28 oz crushed tomatoes
  • 2 cans cannellini beans, drained
  • 2 cans red beans, drained
  • 1 lb chicken

Preparation

Step 1

Combine all ingredients in crockpot and stir well. Cook on low setting for at least 6 hours or until vegetables are tender.
