Ingredients
- 1/4 c. chopped fresh parsley
- 1/4 c. chopped fresh chives
- 2 tbs chopped fresh dill
- Zest of 1/2 lemon
- 4 6oz skinless salmon fillets
- 1 tbs olive oil
- Salt and black pepper
Preparation
Step 1
Heat the broiler. In a small bowl, combine the parsley, chives, dill, and lemon zest and set aside. Coat the salmon fillets with the oil and season with salt and pepper. Broil 10 to 12 minutes, until just cooked through. Top each salmon fillet with the herb mixture and serve with the rice.
