- 3 - 4 LB CHUCK ROAST 1 INCH CUBED
- 1 LARGE ONION DICED
- 2 CLOVES GARLIC MINCED
- 1 RED BELL PEPPER SEEDED AND DICED
- 1 GREEN BELL PEPPER SEEDED AND DICED
- 4 STRIPS BACON SLICED
- 7 OZ DICED CHILIES
- 1/2 TSP THYME
- 1/2 TSP GROUND ALL SPICE
- 1/4 TSP GROUND NUTMEG
- 1 CUP BEEF BROTH
- 1 CUP TOMATO JUICE
- 3/4 TSP PEPPER
- 3 LARGE POTATOES PEELED AND CUBED
- 4 LARGE CARROTS PEELED AND SLICED

Step 1
ADD MEAT INTO SLOW COOKER WITH SEASONINGS, MIX WELL TURN ON LOW AND ADD IN REMAINING INGREDIENTS COOK ON LOW 6 TO 8 HOUR TILL TENDER, SERVE OVER RICE OR NOODLES
