- 1/2 c. butter
- 2 c. graham wafer crumbs
- 1/3 c. sugar
- FILLING
- 8 oz. Cream cheese, softened
- 3/4 c. sugar
- 2 eggs
- 1/4 oz. unflavoured gelatin powder
- 1/4 c. water
- 14 oz. canned pure pumpkin
- 1/2 c. sugar
- 3 egg yolks
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 c. milk
- 3 egg whites
- 1/4 c. sugar

Step 1
Crust: Melt butter in saucepan. Stir in crumbs and sugar. Press into ungreased 9 x 13-inch pan.
Filling: Beat cream cheese and sugar together well. Beat in 1 egg at a time. Pour over crust. Bake in 325 deg F oven for 20 minutes.
Sprinkle gelatin over water in small bowl. Let stand at least 5 minutes.
Measure next 6 ingredients into saucepan. Heat and stir over medium heat until boiling and thickened. Remove from heat. Stir in softened gelatin until dissolved. Chill until syrupy.
Beat egg whites until soft peaks form. Add sugar gradually, beating until stiff. Fold into pumpkin mixture. Pour over cheese layer. Chill. Serve with sweetened whipped cream. Serves 15.
