BREAKFAST - Corn Fritters

Ingredients

  • 1/2 c flour
  • 1/3 c milk
  • 1 egg, beaten
  • 2 1/2-3 cups fresh corn kernels [about 3-4 ears}
  • 1/2 cup green onions, chopped
  • 1 tsp baking powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 2 shakes paprika
  • 2-3 shakes garlic powder

Preparation

Step 1

combine flour and baking soda in a medium bowl. add milk and stir well, add eggs then the rest of the ingredients.

on a skillet add 1 tsp oil and heat over medium to medium high heat. Add a rounded tablespoon of mixture and drop onto skillet. cook about 2 minutes per side like pancakes.

these would be great with some sour cream and chives or creme fraiche!
