Ingredients
- 1 lb haddock fillets
- 1 tsp. Italian seasons, divided
- 2 tbs. olive oil
- 1/3 c plain bread crumbs
- 2 plum tomatoes, seeded, chopped
- 1 tbs parsley
- 2 tsp capers, rinsed
- 1 tsp. chopped garlic
Preparation
Step 1
Sprinkle fish with 1/2 tsp italian seasonings, salt and pepper to taste. In medium skillet, heat oil over medium heat. Add fish, cook, turning once, until cooked through and fish flakes easily with a fork (about 10 minutes per inch of thickness) Remove fish from pan, keep warm. Add bread crumbs, tomatoes, parsley, capers, garlic and remaining 1/2 tsp italian seasonings to pan, salt and pepper to taste. Saute until warmed through. Serve over fish.
