Chocolate Ganache

This is great served over ice cream. It hardens a bit like hot fudge but you can thin it out with a little more cream if you don't want it to harden.

Ingredients
- 8 ounces good semisweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon instant coffee granules

Step 1
Cook the chocolate chips, heavy cream, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
