Ingredients
- 1 lb ground beef
- 2 tbs olive oil
- 2 c. eggplant, peeled and cubed
- 1 c. sliced scallions
- 1 minced garlic clove
- 1 sliced gr pepper
- 1 sliced yellow squash
- 1 sliced zucchini
- 1 diced tomato
- 1/4 c. water
- 1/4 tsp allspice
- Salt & pepper to taste
- 1 tsp sugar (opt)
Preparation
Step 1
Brown the beef drain and add remaining ingredients. Mix well. Simmer covered until eggplant is tender about 20 minutes.
