Crockpot Taco Soup

Ingredients

  • 4 chicken breast about 1 lb
  • 1 15oz can crushed tomatoes
  • 2 sliced carrots
  • 1 diced onion
  • 1 diced celery stalk
  • 1 diced gr pepper
  • 1 c. frozen corn
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp cumin
  • Salt & pepper to taste
  • 4 c. chicken broth
  • Tortilla chips
  • Shredded cheese
  • Sliced avocado (opt)
  • Sour cream (opt)

Preparation

Step 1

Add all ingredients to crockpot and cook on low 5 hours or high 3 hours. Remove the chicken and cut up. Return to pot. To serve place crush chips in bottom of bowl, add soup and top with cheese, avocado and sour cream.
