Ingredients
- 1 tablespoon oil
- 1 onion (chopped)
- 1 clove garlic (chopped)
- 1 green pepper (chopped)
- 1 jalapeno pepper (chopped)
- 1 cup long grained brown rice
- 1 1/2 cups chicken stock
- 2 cups diced tomatoes with liquid
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- I was out of green peppers & Jalapeno so I skipped those. I used canned mexican style dices tomatoes.
Preparation
Step 1
1. Heat the oil in a pan.
2. Add the onions, garlic, green pepper, jalapeno and saute until tender, about 5-7 minutes.
3. Add the rice, chicken stock, tomatoes, chili powder, cumin and salt and bring to a boil.
4. Reduce the heat, cover and simmer until the rice is tender, about 20 minutes.
