Alfredo Sauce - Carrabba's Italian Grill

We use this sauce to give a rich creaminess reminiscent of the original sauce for Fettuccine Alfredo, a famous dish that originated at the restaurant of the same name in Rome in the 1920's. (Yes, we know: the original has only butter and Parmesan cheese, but this is inspired by, and not a replica of, the classic.) It is super-easy to make, so prepare it just before using.

Ingredients

  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 cup heavy cream
  • 1 cup whole milk
  • Kosher salt and freshly ground black pepper

Preparation

Step 1

Melt the butter in a small saucepan over medium heat. Add the cream and milk and bring to a simmer, stirring occasionally, being sure that the mixture doesn't boil over. Simmer until slightly reduced, about 2 minutes. Season with salt and pepper. (The sauce can be made up to 2 hours ahead, kept at room temperature.)
