To guarantee a perfectly done roast, use an instant-read-thermometer. You can buy one at any hardware store or supermarket for less ten $10.

- Mustard
- Panko bread crumbs
- Ten derloin

Preparation
Step 1
Coat roast with mustard rather than butter or oil.
Roll in bread crumbs.
Put in pan, being careful not to dislodge crumbs.
Measure internal heat; inserting thermometer on the diagonal so tip reaches the center of roast.
Don't forget that your roast will continue to cook after you take it out of the oven, rising about 10
F in temp during its 14 minute rest.
Rare = 120-130F
Med-Rare = 130-14-F
Medium = 140-150F
Well Done= 150-160F
