Beans and Escarole Salad

Rachael Ray's lemony sald dressing makes this salad!!!

Ingredients

  • 1 t Lemon zest
  • Juice of one lemon
  • 1 lrg clove garlic minced
  • 2 t dijon
  • 1/4 C EVOO
  • S & P
  • pinch of nutmeg
  • 1 lg head Escarole, cleaned, dried and chopped
  • 1 15oz can Cannellini beans rinsed and drained

Preparation

Step 1

Combine 1 through 7 ingredients in bottom of salad bowl
Add lettuce and toss
Add beans and toss again
Serve
