Ingredients
- 1 pound Ground Turkey or Beef
- 3/4 cup copped onion
- 3/4 cup shredded carrot
- 3/4 cup chopped celery
- 4 cups diced potatoes, peeled or unpeeled
- 1 teaspoon basil
- 1 teaspoon parsley
- 3 cups chicken broth
- 2 tablespoon melted butter
- 1/4 cup flour
- 8 oz shredded cheese
- 1 1/2 cup milk
- Salt
- Pepper
- 1/4 cup sour cream, optional

Preparation
Step 1
Sauté the meat and veggies until tender. Drain off fat. Stir in basil and parsley. Add potatoes and chicken broth, bringing to a boil and then simmering until potatoes are soft. Meanwhile, combine melted butter and flour. Stir this into soup after potatoes are cooked. Once soup is thickened, stir in cheese, milk, salt, and pepper until cheese is melted. Keep it on low heat so the milk doesn't curdle. Stir in sour cream, if desired, right before serving.
