Ingredients

  • FOR THE SALAD;
  • 1 cup cooked dried white quinoa
  • 2 cups defrosted frozen edame
  • 2 cups shredded cabbage (1/2 a head)
  • 2 cups shredded carrots
  • 1 cup curly kale (stems removed and massaged)
  • 1 cup diced cucumber
  • FOR THE DRESSING;
  • 1/4 cup evoo
  • 1 TBS sesame oil
  • 1 TBS lime juice (1/2 lime +/-)
  • 1TBS fresh ginger (more to taste)
  • 3 TBS low sodium soy sauce
  • 2 TBS water
  • 3 TBS honey
  • 2 TBS white vinegar

Preparation

Step 1

Combine all salad ingredients in a large bowl

Step 2

Combine all dressing ingredients and mix very well

Step 3

Coat salad with dressing and plate.

Step 4

To add a little more flavor with cilantro, roasted peanuts, candied pecans, green onions, jalapeno or any topping of your choice
