- FOR THE SALAD;
- 1 cup cooked dried white quinoa
- 2 cups defrosted frozen edame
- 2 cups shredded cabbage (1/2 a head)
- 2 cups shredded carrots
- 1 cup curly kale (stems removed and massaged)
- 1 cup diced cucumber
- FOR THE DRESSING;
- 1/4 cup evoo
- 1 TBS sesame oil
- 1 TBS lime juice (1/2 lime +/-)
- 1TBS fresh ginger (more to taste)
- 3 TBS low sodium soy sauce
- 2 TBS water
- 3 TBS honey
- 2 TBS white vinegar

Step 1
Combine all salad ingredients in a large bowl
Step 2
Combine all dressing ingredients and mix very well
Step 3
Coat salad with dressing and plate.
Step 4
To add a little more flavor with cilantro, roasted peanuts, candied pecans, green onions, jalapeno or any topping of your choice
