- 1 Egg
- 1 Cup Leftover Mashed Potatoes
- 1/3 Cup Flour
- 1 Green Onion (finely chopped)
- 1/2 tsp Baking Powder
- 1 tsp Salt
- 1/4 tsp Black Pepper
- 1-2 TBS Milk
- 2-3 TBS Vegetable Oil

Preparation
Step 1
Beat the egg and mix with mashed potatoes
Step 2
Stir in dry ingredients
Step 3
Add the milk and mix well (should be very thick, like a heavy pancake batter)
Step 4
Heat oil in skillet
Step 5
Spoon 1/4 cup of batter for each cake
Step 6
Brown on side 1 on medium heat then flip and brown other side :-)
Step 7
Serve with ketchup or sour cream (my wife likes mustard but she's weird :-)
