Fresh Salsa

Fresh salsa is so much tastier than jarred; no preservatives nor “natural flavorings”. Google natural flavorings. They can be anything from vegetables to actual meat. This recipe is especially easy if you own a food processor. A blender would most likely work as well.

Ingredients
- 6 ripe Roma tomatoes
- 2 - 10 once cans Rotel fire roasted diced tomatoes
- 4 green onion - whites and fresh green parts
- 1 jalapeño pepper (remove seeds and membrane for mild salsa)
- 1.5 cups cilantro with stems
- 2 large or 4 small Chipotle chilis in adobo sauce
- 2-3 garlic cloves
- 1 tsp or to taste ground cumin
- 1 tsp or to taste ancho chili powder
- 1.5 tbs lime or lemon juice
- Salt and pepper to taste

Step 1
Roughly chop all vegetables. Add the chopped vegetables and remaining ingredients to a food processor. Pulse in increments until the desired consistency is reached. Pour into mixing bowl and adjust seasonings.
Many substitutions can be made but I wouldn’t substitute the fresh cilantro for dried.
