I came upon this recipe years after one of our kids brought it home from school and gave it a try. It was delicious with just a nice amount of heat for a cold winter day.

Ingredients

  • 1/2 cup (125mL) rice
  • 2 cups (500mL) hot water
  • 1/2 cup (125mL) chopped tomatoes
  • 1 tsp. (5mL) salt
  • 1/4 cup (60mL) finely sliced onion
  • 1/4 cup (60mL) finely sliced green pepper
  • 1/4 cup (60mL) melted butter
  • 2&1/2 tsp (12mL) curry powder

Preparation

Step 1

Pour hot water over rice in a 2-quart (2L) baking dish and set in a warm place (where it will remain hot but will not cook) for about 45 minutes.

Step 2

Preheat oven to 350 (180 ). Add remaining ingredients to rice and water, cover, and bake for 90 minutes or until done, stirring occasionally. At first, there will be a great deal of liquid, but the rice will gradually absorb it.. Remove from the oven when the rice is still slightly moist.

If you like your rice a little crispy around the edges, remove the cover for the last part of baking.
