- 1/2 cup extra virgin olive oil plus 1 tbsp
- 3 tbsp minced garlic
- 2 tsp ground cumin and kosher salt
- 1 1/2 tsp dried oregano
- 1 tsp achiote paste
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 8 pieces chicken
- 2 medium onions cut crosswise in 1 inch thick slices
- 4 jalapeno chiles

Preparation
Step 1
Heat 1/2 cup oil in frying pan over medium low heat, Whisk in garlic and cumin ,salt and oregano and achiote paste. Remove from heat and let stand 10 minutes.
Step 2
Put garlic mixture and orange juice and lime juice in a large zip lock. Add chicken and chill for 8 hours.
Step 3
preheat grill to medium 350 t0 450. Remove from marinade and discard. grill chicken covered until instant thermometer reaches 165 in thickest part of the chicken. 20 t0 30 minutes. in a skillet on the grill while chicken is cooking heat 1 tsp and add onion and jalapeno cook 5 minutes per side/
