Ingredients

  • 3 large carrots, sliced (2 cups)
  • 2 medium stalks celery, sliced (1 cup)
  • 1 large onion, chopped (1 cup)
  • 2 bone-in chicken breasts (about 1 1/4 lb), skin removed
  • 5 cups water
  • 3/4 cup uncooked medium pearled barley
  • 2 tsp chicken bouillon granules
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 can (14.5oz) diced tomatoes, undrained
  • 2 Tbsp chopped fresh parsley
  • 1 tsp dried thyme leaves

Preparation

Step 1

In 4-5qt slow cooker, place carrots, celery, & onions. Place chicken breasts on vegetables. Add remaining ingredients except parsley & thyme.

Step 2

Cover, cook on low for 8-9 hours.

Step 3

Remove chicken from cooker, place on cutting board. Remove meet from bones, chop into 1/2" pieces; discard bones.

Step 4

Stir chicken, parsley, & thyme into stew. Increase heat to high. Cover, cook 10-15 minutes until chicken is thoroughly heated.
