Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1-3/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons instant espresso coffee powder
  • 1-1/2 cups semi-sweet chocolate chips

Preparation

Step 1

Preheat oven to 300 degrees and line baking sheets w/parchment paper.

Step 2

In a large bowl, whisk together flour, salt, baking soda and baking powder, and reserve.

Step 3

In a large bowl of an electric mixer on medium speed, beat butter until creamy, about 30 seconds. Add brown sugar and granulated sugar and beat until light and fluffy, about 2 minutes.

Add egg and vanilla extract and mix until thoroughly combined. Reduce speed to low, add flour mixture to butter-sugar mixture and mix until just combined.

Step 4

Stir in chocolate chips and instant expresso powder. Using a 2 Tbls scoop, drop dough 3" apart onto prepared baking sheets and lightly press down on dough to spread the dough into 2" circles (there should be room for 6 or 8 cookies at a time).

Step 5

Bake until cookies are nicely browned around edges, about 20 minutes (bake a little longer for crisper cookies).

Step 6

Remove from oven, cool cookies on baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
