Mediterranean Shrimp and Couscous salad

Ingredients
- 1/4-1/2 cup pearl couscous
- 20-30 Shrimp
- 2 cups sugar snap peas
- 1 cup cherry or grape tomatoes
- 3 mini or 1 regular yellow bell pepper
- Salt pepper and olive oil
- Green Goddess Dressing

Preparation
Step 1
Cook couscous in salted water for 6 minutes. Drain and rinse under cool water then transfer to a large bowl ant toss with 1-2 tsp olive oil and salt and pepper.
Step 2
Rinse and pat dry shrimp. Season with salt and pepper. Fry in large pan with oil. Transfer to cutting board and cut in 4ths.
Step 3
Cut peas crosswise into 1# pieces
Cut tomatoes in half
Remove seeds and stems from peppers and cut into 1/4" rings.
Step 4
Add to bowl with couscous, add shrimp to bowl and toss with green goddess dressing.
Green Goddess Dressing:
Mayo
parsley
apple cider vinegar
scallions
garlic
kosher salt
anchovy paste
