Ingredients

  • 1 cup old fashioned rolled oats
  • 1 1/4 cup whole wheat flour
  • 1 Tbsp brown sugar
  • 1 Tbsp cinnamon
  • 1 1/2 tsp baking powder
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 1/4 cup melted coconut oil
  • 1 egg
  • 1 cup milk

Preparation

Step 1

In food processor, process the oats til they resemble a coarse sand (about 30 seconds). Mix the first 7 ingredients. While stirring, drizzle in coconut oil. Stir til mixed. Combine mix, egg, and milk. Heat a large nonstick skillet over medium heat and coat with cooking spray. Pour 1/3 cup of batter per pancake into skillet. Cook 4 minutes, turning once.

To freeze, assemble dry mix and freeze in airtight container (without the egg and milk).
2nd method--cook pancakes and cool completely on cooling rack. Place in single layers in gallon size freezer bags with parchment paper between the layers. To prepare from frozen--use dry mix, no need to thaw OR place frozen pancakes in toaster for 1 cycle. Then microwave in 10 second increments til heated through.
