- 1/2 cup sugar
- 3 large eggs, room temp
- 1 stick butter, softened
- 1 1/2 tsp lemon extract
- 2 cups all-purpose flour
- 3 tsp baking powder
- 1/8 tsp salt
- 1/4 cup water

Preparation
Step 1
Preheat oven to 350 degrees F. Mix the flour, baking powder and salt in a large bowl. Set aside. Cream together the sugar and butter. Add eggs and lemon extract and beat well. Add the flour mixture, mix well until smooth texture. If dough seems light in color, you can add a drop or two of yellow food coloring. Chill the dough until it is firm.
Step 2
With a small scoop, drop the dough onto a lightly greased cookie sheet, spacing them about 2 inches apart. Bake for 12-15 minutes, or until firm and lightly brown. Remove the cookies from the cookie sheets and allow to cool completely.
Step 3
Combine the icing ingredients in a bowl until just smooth. You want it more thick than thin, but still runny. Dip the tops of the cooled cookies into the glaze, then return to the wire rack, allowing glaze to drip down sides of cookies. Top with sprinkles or lemon zest.
Step 4
Store in an airtight container. You can freeze the cookies, if Unfrosted! If you froze the cookies, let them come to room temperature and then add the icing.
