Ingredients

  • 1/2 cup butter or margarine (1 stick)
  • 1 1/4 cup sugar
  • 3 eggs, room temp
  • 1 tsp vanilla
  • 2 cups sifted a/p flour
  • 1 cup preserved (dried) figs, cut into quarters
  • 1/8 tsp salt
  • 1 tsp baking soda
  • 3/4 cup buttermilk

Preparation

Step 1

With an electric mixer, cream the butter (or margarine) and sugar until light and fluffy, 10 minutes. Add the eggs, one at a time, beating after each addition. Add the vanilla.

Step 2

Sift the dry ingredients together and alternately add flour and buttermilk. Beginning and ending with flour. Fold in the figs.

Step 3

Pour the batter into a greased and floured 9-inch Bundt pan. Bake at 350 degrees F, for 40-50 minutes (until a toothpick comes out clean)
Cool on rack for 5 minutes and remove from pan
