Garlic Broth

This has the rich, soothing flavor of a chicken broth with none of the fat! Hard to believe there is no meat!

Ingredients
- 2 heads of garlic, separated into cloves and peeled
- 2 quarts water
- 1 tbsp olive oil
- 1 bay leaf
- 2 sprigs fresh thyme or 1/4 tsp dried thyme
- 4 sprigs fresh parsley
- pinch of dried leaf sage
- 2 tsp salt

Preparation
Step 1
Combine all ingredients in a stockpot. Bring to a gentle boil, then cover and reduce heat. Simmer for 1 to 2 hours. Strain.
It's an excellent starting stock for soups and sauces and can be frozen.
