Stuffed Baked Potatoes

Ingredients

  • 4 baking potatoes
  • 1/2 c. sour cream
  • 1/2 c. cottage cheese
  • 1 tsp. spike
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • Optional garnishes: basil leaves, chopped chives, minced fresh parsley, chopped green onions, chopped green pepper, diced pimiento, poppy, caraway, or toasted sesame seeds

Preparation

Step 1

Wash and dry potatoes. Oil surface of potatoes with hands. Place directly on shelf in a 400 degrees or oven for one hour until tender when a fork is inserted in center.

Cut potatoes in half and scoop potato out of shell into mixing bowl add cottage, sour cream, and spices. Thoroughly mash ingredients together. Refill potato skins with mixture and garnish with your choice.
