Chicken Tacos

Ingredients

  • 6-7 6-7 2 chicken tenders (or 2 boneless, skinless chicken breasts)
  • lettuce
  • cheese (Mexican blend)
  • sour cream
  • salsa or pico de gallo (fresh)
  • taco shells
  • taco seasoning (to taste)*

Preparation

Step 1

Poach/boil chicken until tender then shred. Keep 1-2 cups of the broth and put the shredded chicken in with the taco seasoning (to taste). Heat and stir until the broth cooks down -- you want to keep the chicken nice and moist.

Serve in crunchy taco shells and top with sour cream, lettuce, cheese, and fresh salsa or pico de gallo.
