Stir-Fried Beef in Spicy Peanut Sauce 1 Picture

Ingredients

  • 2 lbs (1kg) beef strip loin, thinly sliced
  • 1/2 tsp (2mL) each salt and pepper, divided
  • 2 tbsp (30mL) canola oil
  • 1 cup (250mL) finely diced onion
  • 1 tbsp (15mL) finely chopped garlic
  • 1 can (796mL) Compliments Diced Tomatoes, drained
  • 1 tbsp (15mL) finely chopped canned chipotle chilies
  • 1.5 cups (375mL) Compliments Chicken Broth, 30% less sodium
  • 1 cup (250mL) Compliments Balance Smooth Peanut Butter
  • 2 tbsp (30mL) Compliments Cocoa
  • 1 tsp (5mL) ground cinamon
  • 1 tsp (5mL) ground cumin
  • 2 cups (500mL) cooked rice, prepared according to package directions

Preparation

Step 1

1. Season beef with 1/4 tsp (1mL) each salt and pepper. Heat canola oil in a large saucepan over medium-high heat and cook beef in 2 or 3 batches until well browned. Transfer to a plate and set aside.

2. In the same pan, saute onion and garlic until softened. Stir in tomatoes, chipotle chilies and chicken broth. Season with remaining salt and pepper and bring to a simmer. Whisk in a peanut butter, cocoa powder, cinnamon and cumin. Add beef and its juices and bring back to a gentle simmer until the sauce has thickened, about 10 min.

3. Adjust seasoning if needed and serve with rice.
