Slow-Cooker Carnitas Tacos

Ingredients
- 2 lbs boneless pork loin
- 1 med onion, diced
- 3 carrots, diced
- 3 minced garlic cloves
- 1 chipotle chile in adobo, chopped
- 2 tb adobo sauce
- 2 15.5oz cans cannellini beans, drained & rinsed
- 1 28oz can diced tomatoes
- 3 tb tomato paste
- 1 1/2 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp kosher salt
- 1/2 tsp each: pepper
- cinnamon
- cayenne pepper
- 1/4 cup cilantro, chopped

Step 1
trim fat, cut pork in half, combine all minus cilantro in slow-cooker. cook 8 hrs on low
Shred pork.
Stir in cilantro.
Serve with diced onion, crumbled queso fresco & lime wedges
