Angel Banana Pudding Cupcakes

Ingredients

  • 2 extra ripe DOLE Bananas, mashed
  • 1 box (16 oz.) angel food cake mix
  • water, as needed
  • 1 pkg. (4 servings) instant vanilla pudding
  • 1 extra ripe DOLE Banana, mashed
  • 1 3/4 cups cold milk
  • 1 cup thawed whipped topping
  • 2 cups thawed whipped topping
  • Mini vanilla wafer cookies, as needed
  • Assorted color sprinkles, as needed

Preparation

Step 1

Preheat oven to 350°F. Line 3 (12-cup) muffin pans with cupcake papers.

Place 2 mashed bananas in a measuring cup, add enough water to bananas to equal 1-1/2 cups. Mix with angel food cake mix in a large bowl and follow package instructions. Evenly divide batter into prepared muffin cups. Bake 12 to 15 minutes, or until tops are cracked and brown. Allow to cool completely.

Combine dry pudding mix, remaining banana and milk in a small bowl; fold in 1 cup whipped topping. Poke hole in center of cupcake and fill with pudding mixture.

Top with remaining whipped topping and garnish with mini-vanilla wafers and assorted color sprinkles, if desired.
