Ingredients
- 1-2 lbs ground beef
- 1/2 t salt
- 1/4 t pepper
- 8 tortillas (6-7")
- 2 cans mild enchilada sauce (10oz each)
- 1 cup shredded Colby Jack cheese
- 8 oz sour cream
Preparation
Step 1
Preheat oven to 350. Brown ground beef and drain. Add salt and pepper; stir. Add 1/2 of one can of enchilada sauce and stir to combine. Pour second can of enchilada sauce into bottom of baking dish. Dip tortillas, one at a time, into sauce to coat both sides. Divide beef mixture evenly into center of each tortilla and roll up. Place seam side down in baking dish. Cover with foil and bake for 15 minutes. Remove foil; spoon reserved 1/2 can of enchilada sauce over top and sprinkle with cheese. Continue baking additional 10 minutes until cheese melts. Serve with sour cream.
