Ingredients
- 1 tbs olive oil
- 1 lg onion, chopped
- 2 lg carrots, chopped
- 2 rib celery, chopped
- 1 clove garlic, minced
- 3 1/4 c. water
- 3 1/4 c. chicken broth
- 1 1/2 c. lentils
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1-2 tbs fresh parsley, chopped
- 1 tsp sweet paprika
- 1/2 tsp spike (opt)
- 1/2 tsp salt
- 1 c. corn
Preparation
Step 1
Sauté onion, carrots and celery two minutes. Add garlic and sauté another minute. Add water, broth and lentils. Bring to a boil. Add seasonings. Mix well. Simmer, covered, over low for an hour. For creamer soup puree half of the soup. Add corn and heat. Stir in parsley and serve.
