REVISED SCOTTISH OATMEAL MUFFINS

Ingredients

  • 1 C OATMEAL
  • 1 1/8 C BUTTERMILK
  • 1 EGG
  • 1/2 C BROWN SUGAR
  • 1/4 C BUTTER (MELTED)(COOLED)
  • 1 C UNBLEACHED FLOUR
  • 1 1/2 tsp. BAKING POWDER
  • 1/2 tsp. SODA
  • 1/2 tsp. SALT
  • 2 tsp. CINNAMON
  • 1 tsp. NUTMEG
  • 1/2 tsp. GINGER
  • 1 LARGE APPLE (GRATED)
  • 3/4 C CHOPPED WALNUTS
  • 1/2 C YELLOW RAISINS

Preparation

Step 1

1. Soak oatmeal in buttermilk for one hour.
2. Sift the flour, baking powder, soda, salt and spices. Set aside.
3.Add egg and beat well.
4. Add the brown sugar and mix.
5. Add cooled butter and mix.
6. Add the dry ingredients and stir.
7. Bake 400 degrees 13-16 minutes.
MAKES 16 MUFFINS.
