Ingredients

  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1/3 cup honey
  • 2 teaspoons salt
  • 1 cup cornmeal
  • 2 1/2 cups flour (may use a combination of white and wheat)
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda

Step 1

Directions:

1 Combine dry ingredients and set aside.

2 Mix eggs, buttermilk oil, applesauce, and honey.

3 Gently fold in dry ingredients, mix just until blended.

4 Batter will be lumpy.

5 Pour into greased 9x13 pan.

6 Bake at 400 degrees for about 20 minutes or until lightly browned.

7 Also makes 12 muffins, if desired.
