Ingredients

  • For the buttercream frosting:
  • 100 g butter, softened
  • 50 g light brown sugar
  • 100 g self-raising flour
  • 2 eggs
  • 6 tablespoons maple syrup
  • 100 g butter, softened
  • 225 g icing (powdered) sugar
  • 1 tbsp. warm water
  • 1/2 tsp vanilla

Preparation

Step 1

1) Preheat oven to 190 degrees C / 375 degrees F. Beat the butter and sugar in a large bowl until light and fluffy. Sift in the flour.

2) Beat the eggs in a cup. Add them to the bowl, with the maple syrup. Stir until everything is well mixed.

3) Using 12 paper cases in a tray, and a teaspoon, divide the mixture carefully. Bake for 12-15 minutes until risen and firm.

4) Leave in the tray for a few minutes. Lift each onto a wire rack to cool. Meanwhile make the buttercream.

5) Beat the butter, icing sugar, warm water and vanilla together in a bowl until smooth. Spread some over each cake when cool.
