Kristen's Parmesan Roasted Potatoes

"Parmesan and Thyme flavor these golden brown, cubed potatoes!"

- 1 1/2 pounds unpeeled potatoes, cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon dried thyme leaves

Preparation
Step 1
Preheat an oven to 400 degrees F (200 degrees C).
Place the potatoes into a mixing bowl, and drizzle with olive oil. Sprinkle with kosher salt, black pepper, Parmesan cheese, and thyme leaves. Toss to evenly coat, and transfer to a 9x13-inch baking dish.
Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork, about 1 hour. Serve hot or at room temperature.
Tips from reviewers:
1) Cut back the salt by HALF!
2) Several suggested baking at 425 degrees F.
3) Be sure to use plenty of non-stick spray/non-stick foil or
parchment paper.
4) Teeny, little new potatoes cut in half will also work.
5) "...I got a head start on these early in the day by cutting the potatoes and soaking them in water. This will firstly prevent them from discoloration but will also rid the potatoes of excess starch so they roast crispy on the outside and tender on the inside. To save my sanity cleaning the baking sheet, I placed a layer of parchment paper down-cleanup's a snap. The best part of these potatoes was by far the Parmesan. The potatoes were evenly coated and melted during roasting to form a crunchy, flavorful crust..."
