Ingredients
- 2 bunches broccoli
- 1 C shredded sharp cheddar (or reduced fat cheddar), divided
- 1/3 cup minced onion
- 1/4 cup chili sauce, divided
- 1 T chopped parsley
- 1 egg, lightly beaten
- 1-1/2 lbs ground turkey
- 24 saltine crackers, divided
Preparation
Step 1
Heat oven to 350.
Steam & Chop broccoli to 1/2" pieces. Reserve 2 T cheese; sprinkle remaining cheese into broccoli and set aside.
Place 12 crackers into a ziplock bag, flatten air out and seal; crush with rolling pin.
Combine onion, 2 Tablespoons chili sauce, parsley, and egg; add cracker crumbs and turkey, mixing lightly. On waxed paper, pat meat mixture into 12x8 rectangle. Sprinkle broccoli and cheese mixture onto meat to within 1/2" of edge. Coarsely break reamining 12 crackers; sprinkle over broccoli.
Starting at short end, roll up jelly-roll fashion, using waxed paper to help; seal ends.
Place loaf in 9x13 sprayed baking dish.
Bake for 55-65 minutes. Take out meatloaf and place on top of stove. Top with remaining 2 Tablespoons of chili sauce and cheese. Let sit 15 minutes.
